Quinoa and Spicy Tuna Fresh Spring Rolls | Erwan Heussaff

  • Fresh Asian-inspired flavors in a delicate wrapper.
    150 grams of sashimi grade tuna
    1 tsp sesame oil
    1 tbsp sriracha
    2 tbsp mirin
    2 tbsp of spring onions, chopped
    2 tbsp of toasted panko
    1 tsp dried chili flakes
    2 tbsp fish sauce
    Juice of 2 lemons
    2 tbsp of sugar
    1/3 cup of water
    1 julienned carrot
    Crispy seaweed
    Fresh mint sprigs
    1/3 cup cooked quinoa (optional)
    1.) Cube up the tuna and mix with the sesame oil, sriracha, chili flakes, spring onions, mirin, and panko.
    2.) Spread the wrapper. Place in your tuna, some carrots, the mint, seaweed, and the quinoa and wrap.
    3.) Mix together all the sauce ingredients until the sugar has dissolved.
    4.) Dip in the sauce and enjoy.
